This weekend is a busy one for us so I am keeping it simple. As classic (and as much of a staple in my opinion as chocolate chip cookies) is the no bake cookie. It’s one of those recipes I always figured everyone had (kinda like chocolate chip cookies), but I am always surprised when I mention them, or make them, how many of my friends don’t, or have never made them. So…today I share my no bake cookie recipe with you. This is a great recipe to get kids involved in baking. They are fairly quick to make so they are instant gratification for short attention spans. My step-daughter loves to spoon the cookies onto the wax paper and my son loves to measure the oatmeal.
I like to gather my ingredients and materials ahead of time. You will need…
No-Bake Cookies
2c sugar
1/2 c milk
4 Tbsp cocoa powder
1 stick of butter
3 c quick cooking oatmeal
3/4 c peanut butter
2 Tbsp vanilla
You will also need a large pot, a couple cookie sheets, and wax paper. Line your cookie sheet with the wax paper and set them aside. Feel free to tweak these measurements a little bit. You can opt for slightly less sugar (maybe 1 3/4c) or as much as 1c of peanut butter. The hubs likes peanut butter and not so much chocolate so when I’m making them for him I up the peanut butter to 1c.
Put the sugar, milk, cocoa and stick of butter in a large pot on the stove. Mix it up and stirring constantly bring it to a rolling boil.
Boil the mixture for 1 full minute.
Remove from heat and mix in the oatmeal, peanut butter and vanilla.
Drop by the spoonful onto wax paper lined cookie sheets and let set.
Once they have cooled and set, peel from wax paper and ENJOY!
