Mint Oreo Brownies

I must confess. I made these for dessert the other night but they are far better for breakfast. Kidding…but I really did eat one for breakfast! I put these up in the Leap Day post but they were so fabulous I thought they deserved a post of their own. I found the recipe at Love Veggies & Yoga which I discovered via Love From The Oven. I made these with ‘A’ and they were a good age-appropriate project for him. A few steps but not a lot of work and because they involved hand-crushing oreos he really got into it. Some of the steps were easy enough he could do them on his own so he got to be a little more independent in the kitchen with this recipe.

They are fairly rich (if it’s any indication the kid couldn’t finish his brownie because he got too full from it) and a little square goes a long way but boy are they good! I can imagine doctoring up the recipe a few different ways too. You will see that when I took the brownies out of the oven they very well could have been eaten as is without the added frosting (although who is going to turn down frosted brownies). You could make the brownies and just put the frosting and oreos up on top. I think the next time I make these…and there WILL be a next time…I will make them as is but instead of putting the more coarse hand crushed oreos on top I will crush them a little finer and dust the top with them. Anyway, you see where I’m going with this. It’s worth taking a peak at the recipe. Either make it as is or tweak it, but either way do something with it, it’s soooo yummy.

You’ll also notice in the pictures that the brownie pan is lined with tin foil. That was a neat little trick I learned while making these. Gives you a way to lift the entire batch out of the pan without having to pry out each individual piece. Just make sure to spray the tin foil with cooking spray.  Makes it easier to plate them up and make them look nice :)
