The fall baking bug bit back around August 1st. Unfortunately I haven’t had the time (or quite frankly the wherewithal) with a very mobile one year old running around to get much baking done. I’ve managed to whip up a couple of apple crisps over the last few weeks with the apples we picked but that’s about it. Mind you the list is long and I’m itching to get to it but I decided to start simple this morning with an easy pumpkin muffin recipe I found while perusing pinterest one evening.
All you need is a box of yellow cake mix and a can of pumpkin. It doesn’t get easier than that! I was able to whip these puppies up while the munchkin man was eating breakfast this morning. They were ready in time for snack!
First dump your cake mix into a mixing bowl, then your 15oz can of pumpkin (plain old pumpkin puree, no pie filling please). Line your muffin tins (or grease them if your out of liners like I was) and bake at 350 degrees for 20-25 minutes. That’s it!

To jazz things up a little bit I dipped a few in white sugar, a few in powdered sugar and also just left a few plain. They were perfectly yummy plain by the way :) Now typically I’m a ‘from scratch’ kinda gal but in a pinch this is great. They had pretty good flavor although you could tell they came from a mix. I deem them worth a shot, especially if time is not on your side. I think I may try these again and mix in some pumpkin pie spices since I tend to like a more spicy pumpkin muffin rather than a sweet one. I suppose you could throw in some chocolate chips too. Seems like a good base recipe to play around with.
If you are looking for an easy recipe to make with your kids look no further! Start to finish my eight year old could have made these. They were just the snack to cheer the little munchkin man up after a couple of tumbles this morning. He liked them so much he kept asking signing for ‘more’. I had to cut him off after two!
