Angel Food Cake with Pistachio Cool Whip Frosting

Seeing as it’s Father’s Day I thought I should probably give some recognition to the hubby. So, in honor of good old D.A.D, I bring you his favorite dessert. Angel food cake with Pistachio & Cool Whip frosting. Not only is this hubby’s favorite, it tends to turn me a bit nostalgic every time I make it. My Aunt used to make this cake every summer for my grandfather’s birthday as he was getting older and not allowed to have too much sugar. (she just bought all the ingredients sugar free). Every time I make it I am reminded of my grandfather. When I met the hubs he LOVED all things pistachio so I knew this was sure to be a hit. I was right, and it was! Now, it’s my go-to birthday cake for the hubs too :)

It’s really very simple, and requires no baking what-so-ever. That is unless you decide to make your own angel food cake. Making angel food cake is one thing I’ve never been that successful with so instead of torturing myself I just buy them pre-made. It’s a very light dessert and you only need three ingredients besides the cake. A package of pistachio pudding mix, an 8oz container of cool whip, and an 8oz can of crushed pineapple.

Simply mix the entire package of cool whip, the package of pudding mix, and the can of pineapple together until well blend. Then, frost your cake! Whatever you don’t finish in the first day (yea right, like you will have any of this leftover…) just refrigerate.

I don’t usually go too crazy decorating this cake, but we added the little “DAD” banner in honor of Father’s Day.  Now if you’ll excuse me, we are off to devour this thing!
