Going Bananas

We’ve had an over abundance of bananas in the house lately. Hubby went to the store, bought bananas. I went to the store, bought bananas. See… an overabundance of bananas. We just couldn’t keep up. So what was left to do with them but find different ways to cook ’em up. Here’s what we made.

Grilled Bananas over Vanilla Ice Cream

I have to give hubby the credit for this one. I don’t know where he found the recipe. All he did was cut the bananas in half lengthwise. Plan on one full banana per person/serving. After you cut them, drizzle with honey and sprinkle with cinnamon. Grill for a couple of minutes on each side. Scoop them out of their skins and put them on top of vanilla ice cream. This was heavenly….definately try this! I am very sorry the pictures don’t do this dish justice. This was s-o-o-o yummy. It was extremely dark out and I was trying to hurry before the ice cream melted. Maybe I will request he make them again…you know…. for purposes of this blog πŸ˜‰

Banana Bars

My new go-to recipe in place of banana bread. Hubby loves banana bread, but he loves these more.Β (again, sorry for the funky pics. a lot of my baking tends to occur at night these days) These are so moist. I could eat half the pan in one sitting. That is cinnamon cream cheese frosting on top btw πŸ˜‰

Banana Chocolate Chip MuffinsΒ 
(my personal favorite) ~ ‘nuf said

I originally got this recipe from here, but have posted my take on it below for your convenience πŸ™‚


Banana Chocolate Chip Muffin Recipe
1 1/2 c flour
2/3 c sugar
1 1/2 tsp baking powder
1/4 tsp salt
2 large ripe bananas, mashed (about 1 cup)
1 egg
1 tsp vanilla
1/2 c melted butter
1/4 c milk
3/4 c semi-sweet chocolate chips
(feel free to be generous with the chocolate chips)
Preheat oven to 350 degrees. Mix dry ingredients in a large bowl and set aside. Mix mashed bananas, egg, vanilla, melted butter and milk in a separate bowl. Stir banana mixture into the dry mixture just until moist/blended. It’s important not to over mix (we don’t want tough dry muffins…yuck). Lastly fold in chocolate chips. Recipe calls for 3/4 of a cup but I often stretch it to a full cup πŸ™‚ Can you really have too much chocolate in your muffins? Divide batter into muffin cups (either lined or greased). Bake about 25 minutes or until toothpick comes out clean. Tops should be golden brown and spring back when lightly touched.
