With the nice weather kicking in I have started in with the spring cleaning. I am more than happy to say I can finally see the floors in the kids’ rooms! All this hard work has left me with a serious carb craving. While I was trying to hold out until it was time to make our green velvet cupcakes, I caved today when the bananas on my kitchen counter started begging for me to use them or loose them. Happy to oblige, I turned them into banana cupcakes with cinnamon cream cheese frosting.
Banana Cupcake Recipe
1 stick of butter (room temp)
1 c sugar
2 eggs
2 c flour
1 tsp baking soda
1/2c sour cream
1 tsp vanilla
2 large mashed bananas or 3-4 small ones
sprinkle of cinnamon
Cream the butter and sugar. Then add eggs and and mix. Add sour cream, flour and baking soda and sprinkle of cinnamon and mix just until moist. Lastly add mashed bananas and vanilla and mix just until combined. Fill baking cups and bake for 20min at 350.
I got 18 cupcakes out of this.
Cinnamon Cream Cheese Frosting
8 oz cream cheese (room temp)
1/4 c butter (room temp)
1 tsp vanilla
1 1/4 tsp cinnamon
3 1/2 c powdered sugar
Mix the cream cheese and butter until very well blended. Add vanilla and cinnamon and mix again until well blended. Finally add powdered sugar a little at a time and mix well. You can use less or more powdered sugar depending on the sweetness you like and the consistency you want. In hindsight I would have been fine with 3 cups but I like a lot of frosting 🙂 Same with the cinnamon really. I just kind of added until it tasted good.
Garnish with whatever you like. I intended to use chopped pecans but I was out. Walnuts would have worked but I thought hey…why not this bag of mini-chocolate chips that is open and needing to be used? This however only made me wish I had actually put chocolate chips in the batter, so next time I make these they will likely become banana chocolate chip cupcakes…or better yet, fill them with some kind of chocolate center. Oh sheesh! I already can’t wait to make them again. Enjoy!
